Chia, Mango, and Oats Pudding is a creamy and nutritious dessert or breakfast option. It combines the sweetness of ripe mangoes with the health benefits of oats and chia seeds.
Ingredients
1 ripe mango, peeled and diced
1 cup of rolled oats
1/4 cup of Nickmics chia seeds
1 1/2 cups of milk (you can use almond milk, coconut milk, or any other type of milk you prefer)
2 tablespoons of honey or maple syrup (adjust according to your taste)
In a blender or food processor, puree half of the diced mango until smooth. Set aside.
In a mixing bowl, combine the rolled oats, chia seeds, milk, honey or maple syrup, and vanilla extract. Stir well to make sure everything is evenly mixed.
Let the mixture sit for about 5 minutes to allow the chia seeds to absorb some of the liquid. Then, give it a good stir again.
Add the pureed mango to the chia seed and oat mixture, and stir until well combined.
Cover the bowl or transfer the mixture into individual serving jars or glasses. Place them in the refrigerator and let them chill for at least 2 hours or overnight.
Once the pudding has set and thickened, remove it from the refrigerator. Give it a stir to make sure the chia seeds are evenly distributed.
Serve the pudding in bowls or glasses, and garnish with the remaining diced mango, shredded coconut, and chopped nuts if desired.
