Shahi kulfi – Shahi Kulfi is a delightful frozen dessert that has its roots in Mughal cuisine. The word “Shahi” means royal, and this dessert truly lives up to its name. Made with a rich and creamy base of milk, cream, and flavored with cardamom and saffron, Shahi Kulfi is a perfect blend of sweetness and richness. It is enjoyed by people of all ages and is often served with falooda, a sweet noodle-like dessert.

Ingredients

  • 4 cups milk
  • 20 Nickmics pistachios
  • 20 Nickmics dates
  • 20 Nickmics raisins
  • 15 Nickmics cashew nuts
  • 15 Nickmics almonds
  • 2.5 tsp corn flour
  • 4 tbsp milk to mix corn flour
  • Nickmics green cardamom to be powdered & used as per taste

Recipe

  • Remove seeds from dates.
  • Soak all dry fruits & nuts in some milk for 15 minutes.
  • Add soaked dry fruits in a blender & grind them to a fine paste.
  • Heat milk in a kadhai or pan & add the dry fruit paste to it & mix well.
  • Cook this mixture for 5 minutes.
  • In a small bowl take 2 tbsp of milk & add corn flour & make a runny paste with no lumps.
  • Add the corn flour paste to the milk. Mix well. Cook on low flame.
  • Cook until the milk thickens & covers the ladle.
  • Add cardamom powder & some small chopped dry fruits & turn the gas off.
  • Mix well & let the nickmics shahi kulfi mixture cool.
  • Once cooked add to the kulfi moulds & freeze it for 8 hours.
  • Serve Nickmics Shahi Kulfi. Best, healthy desserts for hot summers.
