1. Combine Nick Mics Idli Mix Millet, water, plain yogurt, and salt in a mixing bowl.
2. Mix until smooth; adjust consistency with water if needed.
3. Cover and let the batter ferment for 6-8 hours until doubled in volume.
4. Add baking soda if desired for softer idlis.
5. Grease idli molds with oil or ghee to prevent sticking.
6. Fill molds 3/4 full with batter.
7. Steam in idli stand for 10-12 minutes until cooked through.
8. Allow idlis to cool slightly before unmolding.
